When we see the word “cream”, the first thing that usually comes to mind is milk. In reality, there are many healthy dishes one can create with a wonderful creamy texture without using dairy. Don’t think that’s possible? Try our Cream of Mushroom soup. The ingredients are so simple but the result is so very rich. We use cauliflower, filtered water and vegetable broth. BTW, we steam our Crimini mushrooms so there is no oil in our cream of mushroom. Pretty neat, isn’t it? Oh, and creamy and tasty, of course.
One serving of raw cauliflower has 100% of the daily recommended amount of vitamin C. Wow! It’s also a good source of fiber.
Cauliflower is nutrient-rich. It is high in fiber and vitamins B and C. It also contains high concentrations of carotenoids (antioxidants) and glucosinolates. As you chew and digest it, the glucosinolates are broken down into compounds that may help prevent cancer — they help protect cells from damage and have anti-inflammatory, antiviral and antibacterial effects.
